Yummy Autumn Harvest Soup

I love to cook delicious, wholesome meals and I love fall, so I came up with this recipe, which was inspired by both. I made it in my crock pot and let it simmer all day, but it would come together easily on the stove top too. Enjoy :)

2 c chicken stock

2 c vegetable stock

1 c pumpkin puree

1-3 med roasted Anaheim peppers, diced

1 14-oz can cannelloni beans, drained and rinsed

2 c shredded rotisserie chicken

1 c uncooked gnocchi

2 c frozen kale

1 lg sweet potato, chopped

1 med yellow onion, diced

2 cloves garlic, minced

3 T Ghee or Olive oil

1 t Italian seasoning

1 t dried parsley

Salt and pepper to taste

In med saucepan, heat Ghee/oil and add onion and sweet potato; saute until softened, add garlic and cook and stir one minute.

Combine all other ingredients except gnocchi in crock-pot, then add sauteed veggies. cover and cook on low setting 6-8 hours (high 3-4 hrs), adding gnocchi one hour before serving.
