Greek Salad with Quinoa

Since opening the studio back in October, I find myself spending less and less time preparing the clean, healthy meals my family once enjoyed regularly. I am always looking for simple, nutrient dense recipes that I can prepare on the weekends to last throughout the week. Lately, salads with whole grains have been a staple for us. I found this recipe on Pinterest and made a few tweaks to suit our tastes. I hope you enjoy it too!

  • 6c fresh greens
  • 1 Avocado, sliced
  • 1 c cherry tomatoes, sliced
  • 4 radishes, sliced
  • 1 med zucchini, sliced
  • 2 cucumbers, sliced
  • 1 red bell pepper, diced
  • 1/2 c kalamata olives
  • 1/2 c pepperoncini
  • feta cheese and balsamic vinegar dressing to taste
  • 1 14oz can chickpeas, drained and rinsed
  • 3 c quinoa, prepared according to package directions
  • 1 c pine nuts, toasted

Divide ingredients into 6 large salad bowls and enjoy with whole grain Italian bread
